We’re calling this recipe as semi healthy since there’s no flour/oil in this recipe, but we are usually pretty generous with the dark chocolate chips every time haha.
We subbed out brown sugar for stevia sugar, and used blood orange olive oil from Green Olive Company to line our muffin pan (we suggest not using liners like Amanda since there’s not oil in these bad boys). If you go the blood orange olive oil route, make sure to use a paper towel to spread the oil on each muffin circle–this way you won’t overpower the muffins with the blood orange flavor!
We highly recommend Amanda’s recipe, it’s been a hit every time we’ve made it!
